Gluten Free Dairy Free Chocolate Mousse

 This mousse is delectably rich and creamy and gluten and dairy free! Phew! It’s a perfect “10” in my book for the dessert world.

I often use it as my go-to for dinner guests because it’s silly easy to make, diet friendly, and looks really impressive on the table!

Gluten Free Dairy Free Chocolate Mousse

Ingredients

  • 2 cans coconut cream, set in fridge overnight 

  • 2 T sugar

  • 1 tsp vanilla

  • 1/8 tsp salt

  • 3 T cocoa powder, sifted

  • Shaved chocolate, optional

Directions

  • Add the top portion of each can of coconut cream to a medium bowl. Stop scooping once you hit coconut water.
  • Using a hand mixer, beat on low and gradually increase speed. Add half the sugar as the cream starts to thicken. Once it has gotten fluffy and firm (2-3 minutes of whipping) add the rest of the sugar, vanilla, and salt.
  • Set aside a small amount of the plain coconut cream for topping.
  • Add cocoa powder and beat until incorporated. You may need to scrape the sides.
  • Serve in small dishes. Layer as follows: Chocolate mousse, whipped cream, and shaved chocolate as garnish. Enjoy!

Notes

  • Be sure you buy full-fat coconut milk (sometimes labeled coconut cream) or this won’t whip.
  • Dark chocolate will result in shavings, while milk chocolate produces swirls.
