Why is getting dinner on the table so dang hard?

After having to change my diet because of an autoimmune disease diagnosis, I felt like getting a solid dinner on the table was something I was often failing at because…

-I got discouraged when I made gluten free recipes that fell miserably flat.

-I wanted to put good-tasting, nourishing food on the table but was overwhelmed by the way other ‘crunchy’ moms looked. I didn’t have the energy or desire to keep up with that.

-I didn’t want to be in the kitchen all day. I wanted to spend time with my family and pour into other areas of my life.

All of this often lead to us spending more than we wanted on eating out, and me feeling upset because I used to love to feed my family delicious, comforting meals.

I decided I wasn’t going to settle on feeding myself and my family mediocre food for the rest of my life. If I wanted it done right, I’d have to do it myself! So I started creating recipes. To my delight, many of them were good!

I know first-hand what it is like to have a restricted diet and feel like you are never going to enjoy food to the extent you did before. And then, to top it off, you have the responsibility of feeding your family… And you want them to be able to enjoy food too! 

My mission is to offer inspired recipes that are tried & true, nourishing, gluten free, and won’t keep you in the kitchen all day! Today, I am so happy to be consistently putting good food on the table, and I LOVE to hear when a mama is pleasantly surprised with the way a dish turned out when using one of my recipes.

I continue to work on putting my best work out there, so you don’t have to think about what’s for dinner!
