This salad is light and refreshing, full of citrus flavor, and offers an unexpected touch of spice.

Hearty kale, walnuts, dried cranberries, segmented oranges, feta cheese, and a lime dressing toss together to make a dish that I go back to time and time again… And somehow it’s always better than I remember!
There are lots of possible substitutions for salad toppings to tailor to your liking. Sub out walnuts for pecans or sunflower seeds, the dried cranberries for pomegranate seeds, or the feta cheese for goat cheese or any other crumbly cheese! And as always, you could add grilled chicken or tofu to add protein.
Citrus Kale Salad

- Salad
1 bunch kale
1 diced avocado
1-2 oranges, segmented
1/2 C crumbled feta cheese
1/3 C walnuts
1/4 C dried cranberries
pinch of salt
- Dressing
3 T lime juice, about 2 limes worth
2 t honey
3 T olive oil
2 t dijon mustard
1/4 t chili powder
1/8 t salt
Directions
- Whisk all dressing ingredients together.
- Wash and thoroughly dry kale and separate the stems from the leaves.
- Thinly slice the kale and add a pinch of salt. Massage the kale for about a minute.
- Add the salad toppings and dressing to taste. Enjoy!

Notes
- Be sure your kale is dry before cutting it. The dressing will stick better.
- Cutting the kale thinly makes it much more enjoyable to eat.
